Spaghetti Squash Baked with Onions and Mushrooms

Yield: 6 servings

Ingredients:

  • 1 medium spaghetti squash
  • 2 cups (2 medium) chopped onions
  • 1 cup chopped baby Portobello mushrooms
  • 1 cup tomato sauce
  • 1/2 cup water
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 eggs, whisked

Directions:

  1. Cook spaghetti squash.
  2. Preheat oven 350° F.
  3. Grease 8x8 casserole dish with olive oil.
  4. Cook onions and mushrooms in olive oil.
  5. Add the water to the pan and stir the onions and mushrooms to pick up the brown bits in the bottom of the pan. Cook the onions and mushrooms for 8-10 minutes, until there is no more water in the pan.
  6. Place spaghetti squash noodles in casserole dish.
  7. Stir in water, mushrooms,onions, tomato sauce, garlic powder, salt and pepper.
  8. Mix in eggs.
  9. Bake uncovered for 1 hour..
  10. Let rest for 10 minutes before serving.
